I've been spending a good bit of time having the family riding back and forth and in circles along the roads between Weye and the Red Rose Manor and I think I have this different companion riding system down. There are a few more steps involved in getting everyone to mount, but I think it's worth it since I can set things up for a certain companion to always get on a certain mount (such as Neldor always riding the Bay Appaloosa), and companions can use custom mounts rather than being stuck with only the vanilla horses.

I was all set to use the Gypsy pinto horses for the twins until I saw Cariel petting her white pony multiple times. The twins on the ponies are just too cute. Plus there would be times when the Gypsy horses would revert back to their normal size. Even in a world where magic exists, that would be difficult to explain. Then there is the fact that two small ponies would take up less room in the paddock than two draft sized horsed.
Lastly, another nice thing about this other companion riding mod, I can set up whether Neldor and the twins ride single file, or have the twins ride side by side, have Neldor riding behind the twins, or have the twins following their father, etc. This looks much nicer than the three of them clumped together and bumping into each other behind Aeronwen.
I'm still going to do some experimentation to make sure there are no game breaking side effects, but I think this is the set up I'm going to go with. And I think I will write that the horses were waiting for the family at the Chestnut Handy stables. Good old loyal and helpful friend Aryc helped them to purchase the horses and ponies and arranged for them to be brought to the Chestnut Handy Stables prior to the family's arrival.
